I understand, crazy right? I believe it's because I'm a tiny bit enthusiastic about everything Mexican (enchiladas, chips, guac, tacos… etc)! It's just too good to refuse.
This past week though I just experienced a craving for ravioli, lasagna, garlic bread or basically ANYTHING ITALIAN. Unfortunately all I had fashioned in my cupboard was tomato sauce, but man, do that sauce appear good. Like I type of wanted to consume it from the jar and call it dinner.
Is that strange?
I considered to myself for a long time about what I could do using the tomato sauce. After all, besides spooning it into my mouth area or simply warming it up and pretending it was tomato soup. At one stage I considered purchasing breadsticks from Pizza Hut simply therefore i could drop them within the sauce, but made the decision I wasn't that desperate.
I finished up searching the refrigerator and found trim ground turkey. Obviously cute small meatballs came straight to mind!

I especially love this recipe because it just takes about 30 minutes to throw together. The ground turkey is coupled with an egg and the next spices: cumin, garlic sodium, black pepper, red pepper flakes, a pinch of cayenne, basil, oregano, plus a bit of dijon mustard. I baked my meatballs in the oven for 15 minutes then transferred them to a skillet with tomato sauce simmering on medium-low. Then I gently spooned the sauce over the meatballs in order that they would continue to soak in the flavor. It did not disappoint.

You guys… I must say i love these meatballs from the bottom of my heart. They're healthy, juicy, and satisfying over a complete grain such as quinoa, pasta, or brownish rice. Comfort food makeover, right?
I believe that adding the Burrata mozzarella cheese was what really made the dish special; it melted in to the tomato sauce and created a creamy flavorful pop. Unless you have Burrata, feel free to make use of fresh mozzarella.
Ideally I've convinced you to jump on the meatball loving bandwagon cause I am obsessed with those small bites of heaven.

1 egg
1 teaspoon dried oregano
1 teaspoon cumin
For the sauce:
2 mugs tomato sauce or your favorite pasta sauce (marinara is effective)
4-5 huge basil leaves, chopped
1 teaspoon oregano
4-6 ounces of Burrata parmesan cheese, cut into large pieces
Preheat oven to 400 levels F.
In a big bowl, combine the turkey, bread crumbs, egg, minced basil, garlic sodium, oregano, cumin, dijon mustard, black pepper, cayenne, and red pepper flakes. Mix together and move into 1 inches meatballs. You'll be with anywhere between 16-22 meatballs.
Bake meatballs for quarter-hour.
